1 C red onion, thinly sliced into rings
1/2 C fresh basil, chopped
1/2 C rice vinegar
1 Tblsp. olive oil

1/2 tsp. each salt and black pepper

  1. Place tomato slices and onion in a large, rectangular dish.
  2. Combine basil and rice vinegar, olive oil, sugar, salt, and black pepper, and stir well. Pour over tomatoes and onions.
